QUESADILLAS

Ingredients:

12 tortillas corn or flour
2 cups Queso Quesadilla Los Altos
Queso Oaxaca Shreded
1 cup Crema Mexicana Los Altos
Small sprigs epazote

How to cook:

In a skillet lower heat, place the tortillas ans spread a spoonful of Queso Quesadilla
Los Altos
or Queso Oaxaca Los Altos shreded and a small sprigs epazote (optional)
in a half circle, leaving a ½-in (1 cm) margin around the edge. Fold the tortilla in half,
heat for 2 at a 3 minutes on each side or until lightly browned. Serve with guacamole
and salsa mexicana and garnish with Crema Mexicana Los Altos.

Makes 12 quesadillas.

TAQUITOS DE PUERCO O POLLO
Chicken or Pork Taquitos

Ingredients:

1 lb (500g) boneless cubed pork or chicken
3 black peppercorns
1 clove garlic, peeled
Salt
4 cups of water
3 tablespoons of chopped cilantro (coriander)
1 cup of Crema Mexicana Los Altos
1 cup of Queso Quesadilla La Cubeta Los Altos
1 onion, chopped
20 corn tortillas
Oil for frying

How to cook:

Place the pork, peppercorns, garlic and 1 teaspoon salt in a saucepan, add the water
and bring to a boil. Lower the heat so that the mixture simmers and cook, covered, for 35 minutes or until the pork is tender. Let cool, then shred the meat. Mix the cilantro with the chopped onion and season with a little salt. Add the shredded pork to this mixture. Place
a large spoonful of the meat mixture in the center of each tortilla, roll up and secure with 2 toothpicks. Slice each taco in half. Heat ½ in (1 cm) oil in a skillet, add the taquitos and fry until they are golden brown. Remove the toothpicks and serve the taquitos as an appetizer accompanied by Crema Mexicana Los Altos and sprinkled with Queso Fresco La Cubeta
