This is actually the Cotija Añejo with a little bit of zest. We take the original Cotija
Añejo, and once it has reached its full flavor and rich consistency we cover it with
a special coating of spices and chile which give it a distinctive red appearance,
and slightly hot flavor. These spices combined with the aged cheese are sure to
please cheese lovers who like some added spice in their dishes.

This cheese will melt slightly but will not stretch at all.
